What exactly do you guys refer to as "copypaste"?

(When I got referred to this site by someone on Behance, I was under the impression that this was a site for automotive retouching, compositing and chopping.)

It is but something can be quite a challenge to re create so copy and paste technique are sometimes applied.

Are you referring to when a part of a car is copied from one photo to another and blended/composited onto the car?

Yes.

It's always been popular by beginners to take two similar images and put them on top of each other so that it gives an illusion of a well done job when it's just a very simple copy paste job.

When using donors it's preferred if the donor is either used to as a reference or pieces of the donor images are used and not the entire car.
